Because I think it's only fair.........................

Since I have been so SHOCKED that so many of you don't know about some of our Southern foods .....I thought I would research some of the foods you left me that I had never heard of (to show my ignorance. ha!) I bet this will be a learning experience for a lot of us: 1. Fry Sauce - two parts mayo, one part ketchup that people in Utah, Idaho, Nevada, and the Northwest eat with fries. Sounds pretty good to me.
2. Cincinnati Chili - which is not like the kind of Texas Chili I'm used to. This is like a meat sauce you put over spaghetti or hot dogs.
3. Scrapple - a mix of pork scraps, corn meal and flour. This is a mid-atlantic treat (Delaware, Maryland, NJ) I think this is a breakfast dish
4. Cheese curds - I didn't find a good explanation but they are eaten in MI, WI, MN and Canada
5. Pierogis - (I've actually heard of these but never had them) - Dumplings stuffed with varying ingredients
6. Tri Tip - a steak mostly found in CA (looks yummy!)
7. Goetta and Brats .....I know about Brats but not about Goetta (something similar)

And apparently y'all in the north (MN, ND) call casseroles "hot dishes". ha!

This was really fun to find out about different foods.
I will have to make Gumbo and Chocolate Gravy soon and post the recipes for all of you!

In the meantime - I'll just leave with you pictures of some Southern Sugar:

It's raining and BLEH here today so sweet girl was still in her PJ's and had some bed head crazy hair when I took these but she is still precious (to me!)
P.S. My dress from the last post was from Wal-Mart a couple of years ago! I love how everytime I get 20 comments/e-mails asking me where something I'm wearing is from .....it's Wal-Mart $14.95 and not Boutique $79.95. :-)

Kelly,

Don't feel bad I was born and raised in Michigan and I have never heard nor eaten "Cheese Curd". I moved out to California almost 3 years ago and that is when I first discovered "Tri Tip" and let me say it is all that they tell you...it is a great cut of meat if cooked right....

such a fun post! i've lived in the south all my life with the exception of a 16-month stint in Seattle. so i've heard of the fry sauce, but NONE of the other things you included. but i'm like you, i'll take paula deen and her stick of butter with anything and everything!

your southern sugar is just adorable. i know you just want to eat her up! my two children STILL ask to check on "har-har" every single day. i just love it!!

I have never heard of any of the things you listed!

Before I married my mother would make chocolate gravy every Sunday morning before church. It was my sisters favorite. I like just brown gravy on my biscuits.

I just love being from the south!

Wow! I haven't heard of a single one of those! I'm going to have to try the fry sauce.
Harper is so adorable! I think you are exactly right about the arranged marriage with Brody! She is for sure some southern sugar!
And that is one of my favorite dresses that I have seen you wear. I really like it in the winter when you wear it with boots. Who knew it was from WM??!!

Kelly, very fun post! Here in RI we have coffee milk. Its kind of like chocolate milk buts its made with a coffee syrup manufactured in RI. I am a 3 minute drive from Massachusetts and I can't even get it over the border in the closest MA restaurant. Its only served in Rhode Island! Its yummy!

Like the popular children's game...duck duck goose up here in MN is duck duck grey duck.

Thought I'd share. :)

I must live in a box!!! The only thing on this post that I have heard of is cheese curds and that is only because a place called Culver's has them. Maybe Indiana is just a boring place to live. I so want to find me some of that fry sauce!!!

Kelly said...

Cute cute cute pictures!!! Btw, I LOVE your dress in the "Sweet Caroline" post! Such a good color on you!!

The 'Ssippi Scoop said...

Ya'll don't have a Zaxby's or Guthrie's or anything like that there? That fry sauce is the same thing as their chicken fingers dipping sauce and it is yummy.

I just moved from Alabama to Mississippi two years ago and they have things here we didn't have in Birmingham. They call crackers like the kind you get in an 8 pack at the gas station 'nabs'. They have this dish called chicken spagetti and it looks so nasty. I haven't tried it but they eat it up. They call an outfit, like what you wear, a suit, no matter what it is you are wearing. It could be gym shorts and a t-shirt and they'd say, "where did you get that suit."

JP said...

Cheese curds are also a favorite in western North Carolina. West Jefferson, NC, is home to North Carolina's only cheese factory, "Ashe County Cheese." There you can try samples of fresh, salty cheese curds right in the store. YUM!

So happy to live in the South. Bring on the butter and bacon to flavor fresh veggies.

Your little southern cutie is adorable. I have an older man for her when she is ready to date, say in about 25 years.

Monica said...

My hubs is from Minnesota. Cheese curds are pretty much deep fried cheese I think. They are salty and they are heaven!! Everything is hot dish and bars (deserts that are in a baking dish and layered are bars) . When we went to plan out wedding, I asked my husband to be what he wanted for the grooms cake and he had no idea what I was talking about, neither did anyone in his family. It is funny how traditions are regional.

We have a friend from Cincinnati that introduced us to Skyline Chili (Cincinnati chili) and it is my husband and oldest sons favorite meal. You can buy the meat sauce in a can at Kroger for anyone that wants to try it. It is usually found in the chili section on the top shelf. It is a cheap easy dinner.

Just FYI, cheese curds are fresh if they squeak when you bite into them. I prefer my deep fried. The cheese factory nearest my parents (Rudolph, WI) even has chocolate cheese; it's pretty tasty. And of course, you could eat them alongside your beer brats.

I'm ashamed to admit that I'm from scrapple country. Blech! It's worse than hot dogs when it comes from the scraps (hence the name) that are used to make it! Gag!
Have you heard of/tried whoopie pies? We get them in Maine. Not sure how far south they are. I know they're not in Jersey. Yum! They're basically two round pieces of chocolate cake with icing in between. YUM!! Sometimes peanut butter icing or other flavors. I'm sure you'd like them! ;)

Minnesotan's primarily eat deep fried & battered cheese curds, especially at the State Fair. LOL

Did you know that fresh cheese curds (non fried) squeak when you eat them? They are so good both fresh and deep fried!!

Yep, Casseroles here are called Hot Dishes and to be honest, it wasn't until I was older that I realized they are the same thing. LOL Oh but let me please clarify, we do NOT sound like the folks in the movie Fargo or New in Town. The accents were way over the top!

I seen someone else mention Duck Duck Grey Duck vs Duck Duck Goose, apparently we just like to be unique. LOL My husband tells me I'm wrong all the time when I say Grey Duck. :)

Alyssa said...

I admit, most of these foods are new to me too! I'm from Texas and love okra pretty much any way it comes! And I can still remember when I realized my aunt had never heard of Rotel. How do they get through football season without cheese dip?

Someone commented about Rocky Mountain Oysters. They're also called Lamb Fries. I actually ate them 'fresh' when I was in Australia. They're not that bad, but I wouldn't order them off a menu...

I like the idea of trying new things though! :)

Jennie Peakin said...

MMMM...Cheese curds...eating here in Iowa too! Some call it "squeeky cheese" because it squeeks on your teeth when you eat it. There is no other word for them to me aside from DELICIOUS! :) You should try them when you get a chance.

Ohmy goodness, those pictures are SO precious. She is such a doll!

My freshman roommate in college was from New Jersey and always talking about pork roll. I've seen it at the grocery and it looks fairly disgusting--kinda like scrapple!

My parents are from OH and we often had mush instead of grits.

Kate Craig said...

Cincinnati chili is also sweet! I can't remember if it's chocolate or brown sugar they put in it. (personally, I think it's gross)

Jessie Weaver said...

Also, I had never heard of Rotel before moving to Tennessee. I'd also never drank sweet tea or eaten grits, greens, or beans as a side, not IN something.

The Riedel Family - Confessions of a Marine Wife said...

I forgot to mention that out west (CA, NM, AZ, etc.) they have no idea what white cheese dip is. I know that for me living in NW Arkansas, I have become accustomed to my white cheese dip from the local mexican restaurants. And when I moved out to CA 3 years ago, I for sure thought that they would have the best of it. They just looked at me like I was crazy! Ha! Boy, they don't know what they are missing out on!

Teresa said...

The 1 picture has a Skyline Chili thing in the back, don't try it. It is terrible. They actually put a restaurant of Skyline Chilli in here locally and it never lasted.

Stephanie said...

First of all, cheese curds are absolutely AMAZING! If you're ever in WI, you should definitely try some. ;) They squeak when you bite into them - for real! There's a little fast food place near my parents house in Appleton, WI that makes fried cheese curds. We used to BEG my dad to take us there on Saturdays when my mom was working just so we could have some good ole fried cheese curds!

Secondly, we've used the Fry Sauce as Fish Sauce. I don't know that we did 2 parts mayo to 1 part ketchup - we would just mix up some ketchup with mayo and eat it with boiled cod. Yum! My husband is from Michigan and had never heard of it, so maybe it's a WI thing...or just a family thing ;)

Finally - I just love the sweet smiles your little Harper gives. I especially loved the videos you posted a little while ago where she would pause between eating to flash her daddy a smile. TOO precious! Those are the moments that make being a parent TOTALLY worth it ;)

Hey Kelly,
My grandparents and great-grandparents (from South Carolina with no Maryland/Delaware roots at all) ate Scrapple. These were people who did not waste any food whatsoever (depression-era), so now that you've told me what's in Scrapple, I understand why they ate it.
Very interesting post!

I live in Pennsylvania...we also have scrapple (it is eaten at breakfast) and pierogies here. However, our pierogies are different than the ones I have had in Indiana.

Out in Pittsburgh, they have this dish called pretzel salad. It's crushed up pretzels, covered with whipped cream, and then covered with red Jello. It's prepared in a 13x9 pan and then cut into squares. It's a little odd.

Here, we have a lot of Pennsylvania Dutch-type foods like Shoo Fly Pie and halushki and halupki in our local cuisine. It's yummy and down-home...but it's no fried okra or grits!

Also (Could this comment get any longer?), I love how wide Harper is smiling in that last photo! SO CUTE!

Jill said...

Good greif!

I have a few comments:

1. Fry Sauce, that sounds awful! I mean, if you're into it fine but I think I'll pass.

2. Cincinnati Chili, we call that Skyline Chili here in Ohio.

3. Scrapple, looks like something I would try but the name is strange to me.

4. Cheese Curds, just sound wrong. I'm okay with cottage cheese but those things you pictured, look nasty.

5. Pierogis. Probably one of my ALL TIME favorite foods to date!

6. Tri Tips. Again, something I would like to try...

7. Goetta... those look gross too. I have a hard time with brats and usually prefer a hot dog but everyone has their opinions.

Thanks for sharing this post with us! ha!

TRI-TIP is amazing! It is tender and oh-so yummmmmy!

Funny okra story... we life in CA, just in case you can't tell. Anyway, my daughter at 4 years old was watching a show that was discussing okra. The dialogue said, "Let's go eat okra!" My daughter ran out of the room screaming saying, "NOOOOO, DON'T EAT OPRAH!"

Meghan said...

Skline Chili is the best but you have to eat it with the noodles! You can find frozen chili in the freezer section of Publix. Frozen is not as good as the real stuff! However, being a transplated southern girl from Indiana it will do!

One more thing - anyone from the UP (upper peninsula Michigan) LOVES their pasties. They are basically meat and rutabega cooked inside a sort of pastry. My grandma grew up in the UP and we've gone to visit her brother several times over the years. We would always stop to buy some pasties - they are really yummy! I guess wives used to make them and wrap them up to send with their hubbies who were working in the mines. They would stay nice and warm that way and they are very filling.

Glad I live in the South! One of my best friends is from Connecticut, and she loves coming over for dinner. She will sit and watch me cook dinner. The first time I made tea, she nearly fell out of her seat. She couldn't believe I put sugar in it! My cooking is like a parlor trick that she never gets tired of watching.

The Scott Household said...

Kelly - you made me and the baby crave Skyline! It has cinnamon in it :) You can have it certain "ways" - a 3 way has spaghetti, meat and cheese; a 4 way is all that plus onions and a 5 way has all that plus red kidney beans.

Cheese curds are delicious and squeak on your teeth. I'm not sure how they're made - we found them in a specialty store in Cincinnati, OH. My friend who lived in WI found them up there and ate them. I lived in Northern Michigan (in the Upper Peninsula) for a few years and they had them there.

Goetta...you made me cry :) My grandfather used to make homemade goetta and my mom makes it now. It has pinhead oats (the oats you find in Quacker's is rolled/flat.), sausage and yummy other things. It cooks forever (something like 5 hours) and the way Grandpa (and mom) did it was to put it in loaf pans and freeze. When they wanted to cook it up, they sliced it up, and fried it in butter/lard until crispy and hot. I've never seen it in a sausage form.

You made me soooo hungry!

Oh, have you ever heard of Pepperoni Rolls? My dad grew up eating them in Fairmont, WV and they are SOOOO good. I'm not sure if they are local thing or a state-wide thing. It's basically a large roll (like a sub), with two or three sticks of pepperoni in it. The pepperoni is put in the sub when the dough is raw and then is baked. The way dad eats it is to put pepper sauce and cheese on it (he cuts it open). I like mine withe pizza sauce and cheese!

Thanks for posting this - it made me cry but good tears!

That fry sauce sounds so goood... isn't it funny how people in different parts of the country eat such different foods. I can't think of many unique things up here in New England besides all of the fresh seafood. The only unique word we use up here is that we call our subs grinders. When I lived in the south and went out for a sub and ordered a "grinder" they had no idea what to give me. Now I'm hungry, off to fix dinner! Harper looks precious as usual.

Pierogis (#5) is also a Russian food. My husband introduced this to me. It is a favorite! They are usually stuffed with meats but can be stuffed with potatoes or sweets. After boiling them and they rise to the top, they are drained and served warm with sour cream. We love to put freshly ground pepper on them too. You can find faily simple recipes for these on the web and they make a FANTASTIC soup!

this post is great!!! I LOVE cheese curds! They're big here (Canada), and the best thing to do with them is to use them in poutine (pronounced poo-teen, or actually poo-tin because it's a french word). Poutine is french fries with gravy (beef gravy I think) and cheese curds. The cheese melts from the heat of the gravy and fries and it is so gooey and dee-lish...even though it sounds nasty.

And pierogies are a polish/ukranian thing. They are really popular in Western Canada as a lot of Ukranians live there. I make them from scratch (my dad's side is Ukranian), and never ever buy from a store. Homemade is best!

AJU5's Mom said...

So, I didn't read through all of the comments - so this might have been explained before! The cheese curds I have had before came directly from a cheese factory (we actually went to one). They are the cheese pieces before they form them into the rounds, etc. It is very good, but you normally only find it around the cheese factories. I don't think it has a long shelf life, etc!

I grew up with a deep love for cheese curds. They don't taste too much different than regular cheese, just a little squeaky. I always think of Little Miss Muffet eating her curds and whey. I always got them at a cheese shop in Michigan on vacation, and now my parents buy them for me at an Amish cheese factory in Northern Indiana.

Cheese Curds ROCK. Seriously. I go to the county fair just to get some. yum yum yum

Thanks for giving a shout out to some good MN food! :)

Yay for tri-tip! Seriously Kelly, you will have to try some if you're ever on the West Coast. It is so good!

Thanks also for the interesting lesson on all the other foods you featured. I had never heard of any of the other ones you listed! :)

I'm from MI and I've only eaten cheese curds once, and that was way up in the MI/WI border. They were fried and very yummy, though. I think it's a UP Michigan thing.

Like the "pasty" that's everywhere in the UP. Kind of comparable to a pierogi. Sort of.

Courtney said...

I love Cincy chili, it is a must to try. I have heard of Goetta because they have a festival around that food in Cincinnati. Some of the others were new to me. Thanks for doing this post, very interesting!

Joan said...

Skyline (or Cincinnati) chili is the best. There's a longstanding feud among Cincinnatians on Skyline vs Goldstar chili. They are both served over noodles with cheese on top but the taste of the chili is different. Skyline has cinnamon in it (and rumor has it that there's a bit of chocolate in it also). So delicious. It's always my number one stop when I go back home.

Cheese curds are great too! I'd never had them until I moved to Wisconsin but there's nothing quite like them. Most stores outside of the WI, MN area don't carry them because their shelf life is minimal which I was so disappointed about after moving to NC.

Esther said...

OK, Wisconsin girl has to clarify. REAL cheese curds are NOT deep fried. They are, for all intents and purposes, chunks of cheese taken out of the whey during cheese making. (Hence, curds and whey.) They are salty and delicious. When they are fresh, they squeak between your teeth. I wish I could send some to you, Kelly, they are DA BOMB!

SnoWhite said...

cheese curds are AMAZING. Especially when they are so fresh they are squeaky!! :) you can also deep fry them -- oh, boy, are those delicious. :)

and yes, we from MN do call casseroles "hotdishes" :)

Cincy Chili is so good! It has chocolate in it too! Cheese Curds are also good! You can find them at any Culvers and of course up here anywhere in WI, where I live!

choc gravy is a family favorite of ours here in cali. it honestly makes me sad that y'all haven't had tri-tip it's fantastic! now one other thing you used to talk about on your blog all the time that i had to ask a southern friend what it was... petit fours? i didn't even know how to pronounce it! i don't know if we can even find them in a bakery here. i might have to inquire, cause they look like way too much work to make.

I loved reading this post with various foods from around the country. I wonder if you have heard of tripe. My husband is from Vermont and evidently they eat this up there. It is the lining of a cow's stomach (I think). They prefer to eat it pickled. I have only seen my brother-in-law cook it, but have never had the courage to try it. (Nor do I plan to.) More than any of the foods you posted about, I loved the pictures of that Southern sugar at the end. Harper is absolutely the most precious baby!

What an informative post! I've lived in Michigan all my life and I have NEVER heard (or seen) Cheese Curds. The Scrapple is...ummm... interesting!!

The BEST part was the sweet smile on Harper!!! I think your daughter is the cutest little thing around.

I found your blog (somehow) several months back and just LOVE checking it (I guess I'm a "blog stalker"). I look so forward to seeing pictures of Harper, and I'll tell you what - that small video from the other day just made me laugh... I watched it like three times in a row. I couldn't help but laugh out loud when she'd look at her daddy and flash a huge smile!

Kelly, I think the "fry sauce" is also what they use with fried chicken tenders at some of the restaurants around Alabama. I grew up in Dothan, AL and never saw it, but did in college when i went to Troy at a local place called "Crowe's". (Best chicken...) and they use something like it here in Athens, AL at Roosters. the only thing that may be different is around here, they add a few poppy seeds to it. (i guess to make it pretty??)

I went to college in a different town in Missouri than I grew up in and they served "fry sauce" but they actually put it on their burgers. Guess it gets both the people who like mayo and those who like ketchup. But it is weird how one country can have so many variations of food choices. Gotta love America!

Grams said...

In Germany they use mayo to dip their fries. They rarely even offer ketchup at restraunts. BTW Old Bay seasoning is put on EVERYTHING in Maryland and pop is called soda.

This was soooooo much fun to read...

1. I didn't know there was a name for what I do with my fries - now I know! Here I thought I was doing something special!

2. Scrapple - in one word - WHY! Why would you eat something that looks, smells and tastes like that!

3. Pierogis - Nirvana sauteed in in butter with onions...mmmm mmmm good.

4. Cincinnati Chili - funny story here...had a friend visiting from out of town and my husband says let's go get spaghetti...so we are thinking Italian. Not my husband, we end up in joint with antlers on the wall and Cincinnati Chili on the plate. Hmmm...note to self...don't let him pick a restaurant I am not familiar with!

5. Trader Joes has TriTip and it is as good as it looks.

6. cheese curds - I am intrigued!

This was great...thanks for the tour across the nation!

Shalom,
Denise

I have a friend that's a trainee chef and she says that fry sauce is the same as Thousand Island dressing - mayo & ketchup. (I don't know if you have/ know about Thousand Island dressing in the US? But that's what it's called here in Australia. We use it on salads mostly.)

PS. Chocolate gravy? I need to see that! And I've always wanted to know what "biscuits" are, because a lot of times I see them mentioned with gravy, and here in Australia a biscuit is a cookie, so that just seems bizarre to me! (But then again, we do love our salty yeast spread otherwise known as Vegemite, so who are we to judge?!)

I've lived in NJ since I was about 4 years old and still don't consider myself a "Jersey Girl"...but I feel the need to represent the state!! I have personally never seen or heard of scrapple...And there was a commenter who mentioned pork roll. This is sliced super thin, heated on the grill and eaten with an egg and cheese breakfast sandwich - sort of like taylor ham, etc. (only thinner). It looks kinda gross uncooked but once it's grilled it's just another way to eat thin, crispy, greasy pork! Can't go wrong with that!!

Harper is beautiful as always!! She's just so dang cute!

Fry sauce? Now that sounds real good (anything with mayo). And Scrapple? That sure does sound like something we'd eat down here, doesn't it?? It just sounds (and looks) like something we'd get at the Waffle House...only we'd get it scattered, smothered, covered, and chunked! Right?! haha!

I think that scrapple is made in towns that process pork...I remember hearing it was what was "left over"...they said it was everything but the squeal. That fry sauce is the same as Zaxby's Zax Sauce, there's one in Fayetteville. Also, that Cincinnatti Chili is called Spaghetti Red I think. There is a restaurant/diner in Joplin (where I was raised) that makes it. It's pretty much Chili on top of Spaghetti. They serve it with onions, crackers and pickles. And it's pretty awesome!!
