A couple in our Sunday School class just got back from adopting a soon to be two year old boy, Nik, from Russia. This is Ashley and Nik while they were in Russia. Ashley and Bart already have two beautiful little girls (and when I say beautiful - I mean I fully expect them to be Miss Arkansas 2022 and 2025) and they felt like God was leading them to International adoption. Our class is making them meals this week and next and I got to be first. I almost started sobbing in her kitchen as I watched him smile and run with his arms open to his "momma". You can already see the love all over his face for his new family. It was such a blessing to me just to see them.
I decided to make a good old standby - Mexican Chicken (or King Ranch Chicken). This is always good and kids will normally eat it too.
I'm sure most of you make a version of this but if not - here is the recipe. It's easy and so yummy!
2 or 3 chicken breasts boiled and chopped up in pieces
1 pkg corn tortillas
1 can cream of mushroom soup
1 can cream of chicken soup
1 can rotel
1 cup cheddar cheese
Grease casserole dish and break up tortillas in bottom. Place cut up chicken on top. Mix soups and rotel and pour over chicken. Cover with grated cheese. Bake at 350 for 20-30 minutes or until cheese is golden brown.
I also made them the strawberry oeey gooey cake from Hillary's blog. I've never met an ooey gooey cake I didn't like and this one didn't let me down. I saved some for us to try out. YUM!

Mmmmm....I LOVE King Ranch Chicken! I make that alot for my family, but I add green peppers and onions to mine.
I popped over to Hillary's blog to look at that strawberry ooey gooey cake and it looked amazing. So did that fried okra salad! I think I've got some new recipes to try!

I read your blog from time-to-time through my sil, Meredith's link. I've never commented, before, but tonight I just HAD to write when I saw Ashley and Nik's picture! Bart's twin brothers and their wives(Brent & Carrie and Brian and Kendra) are some of our closest friends. (Evan and Bart are actually pretty good friends, too, but I don't know Ashley that well.) Anyway, I've followed Bart and Ashley's story since the beginning through Carrie and Kendra and knew they were in Russia and that Ashley had to stay longer than they hoped, but Kendra hadn't called to tell me they got to come home! I was just thinking about all of it today and was planning on calling Kendra tomorrow to find out what the status of everything was, then I clicked on your link and found out for myself!!! Isn't that crazy??!?!?! I immediately called Kendra to tell her I found out through a different source! I'm so excited that Nik is finally home!!!
Bart and Ashley are two of the most loving, giving people I know. (I have another story about them and giving that is too long to put on this comment since I've already written a book...I cry everytime I try to tell it!!!)
I'm so excited that Nik is finally home with them! YEA!!!
Oh, and I agree. Brooklyn and Addelyn(sp?) are BEAUTIFUL!!!!

What a sweet story...I'm sure that little boy will be well-loved, and I'm sure his family has no idea what joy he'll add to their lives. Adoption is so beautiful!

We moved to Louisville, KY from NWA about a year ago so Evan could finish school/go to seminary.
I'm originally from Stuttgart and went to college at Arkansas State, but Fayetteville/Farmington is really "home" to me now. Evan's dad is the pastor at FBC in Farmington, where we were members before we moved. (He and I actually met through a bible study there!) Scottie was Evan's youth minister back in the day at Magnet Cove(when Scottie was at OBU and Evan was in high school) and they've been pretty tight since then, hence my close friendship with Allyce.
Your parents live in Flippin? Did you graduate from Flippin? Do you know Padgett McClain Isaaks? I used to teach with her in Springdale. I also dated a guy before Evan whose best friend lived in Flippin and we went to Flippin a few times to visit him. (I'm kind-of scared to tell you his name-HA!)It's Eric Hudson. Except we called him Coy for some reason. My sister and bil used to live in Gasville and I used to go visit them all the time, too. (My bil was the Wildlife Officer for Baxter county for several years.)
Oh, and Norma...isn't she the sweetest person in the world??? She was on the mission trip to Guatemala that Evan and I went on a couple of years ago and I enjoyed being around her so much. She has an AWESOME photography eye! I have a CD full of pictures from that trip are very much worthy of being blown up into art!
Again...sorry for the book. I got about half-way into writing this and decided I should've sent an email! HA!

This story is especially sweet to me since I was able to spend some time in orphanges in Russia last summer. I am SOOOO happy they were able to adopt that little boy. Most of the places I went to did not allow Americans to adopt the children and it broke my heart. I just love to see here how the Lord can still move no matter what the obstacle is!

I am so excited to see this post. I actually work with Bart H at PRG in Rogers and knew his brother from church, and other brother worked with me at PRG as well! What a small world! That is so exciting the adoption went thru! I hadn't heard from him lately... So, I'm glad to get an update thru a strangers blog! :)

I have a friend that will be returning June 18th from adopting a boy from Russia - so exciting! She already has a girl from there and one biological girl as well! So inspiring, so sweet, and such a blessing!
I think I am going to try an make this Mexican Chicken next week for dinner. I will let you know how it turns out.

I wanted to say congratulations on your pregnancy!! That's so exciting!! It's a heart breaking thing to go through..I experienced it for a shorter time than you but once things got started it kept working with a vengeance..I had 3 girls in 35 months and a fourth 3 years later!
