Show Us Your Life - Desserts

Last week was great - I'm going to have to go through and try a lot of those recipes.
This week is even better - desserts! Yum!!!!

CAKE BALLS

This is super easy and you can make it any kind of variety you like. I've seen yellow cake and chocolate icing and chocolate and chocolate. But being the good Southern girl I am - I LOVE red velvet cake so I thought this would be good.
All you do is bake the cake mix according to directions
When it's still warm - crumble it up in a bowl and mix in a can of frosting (I used cream cheese with the red velvet!)
IMPORTANT STEP: Refrigerate the cake and frosting for about an hour before you start making balls!
I used this handy little scooper from Pampered chef to scoop balls
Melt almond bark (either vanilla or chocolate - depending on your cake) and dip balls in the bark. You could use toothpicks or a fork - but I used this egg separator and it worked GREAT!
And voila - one of the yummiest things you will ever taste!!!

You can also do something similiar with cheesecake and dip it in chocolate! It's amazing!

Hilarious, I have never seen red velvet cake mix in a store here up North! I always have to make it from scratch. Maybe that's why I've never really liked it. I must try your recipe though!

I agree with Sarah... I've never heard of almond bark? Is it in the baking aisle? A cookie?? It's hard to keep up with you southern girls and your funny ingredients!!!!

OH I have seen these several times now and really want to try them. Too bad I have no self control for stuff like this - I would have to make them for company!
I can't get boxed cake mixes where I live, so I need to find a good red velvet cake recipe... anyone know of one????

oh & for those above who asked. almond bark is in the baking isle with chocolate chips, etc. you can get white or milk chocolate.
& another yummy thing to do with almond bark is: make ritz peanut butter cracker "sandwiches", dip into almond bark and let cool on wax paper. delicious!

I promise, and then the other day about the shoe thing, that was what my post was going to be about, and then I promise the baby crib getting lowered and Aidan climbing up to everything. This looks really good but the name freaks me out. I think they should be called cake bites or something. Comes too close to an all too famous SNL skit :)

Hi Kelly,
I am coming to Bentonville for WAR EAGLE. Have made the trip many times with my sister (she lives in KC) and her peeps from Wichita. I believe I do come the farthest all the way from NC! Well, we stay at the convention center and usually eat around there, but now that I "know" a local, well wondered if you could give us a few ideas for dinner???? I have been wanting to try those, but I never found a good recipe!! We are having a pot luck at one of my Church meetings next week, this is on my list to bring now. Oh and if you would like more Pampered Chef Products just let me know!!! I would love to stock your kitchen with more pieces. You need to get the Deep Covered Baker if you don't already have it, you will LOVE IT!!! You can make a cake in the Microwave in 11 mins!!!

I love to make these! Sprinkle green sugar sprinkles on the red velvet ones and they are GREAT for Christmas parties - very festive! Also, have you done this with OREOs? Crumble Oreos with cream cheese icing and dip, and oh my goodness! Yum! I think I'll be making some cake balls this weekend!

Oh Man, those cake balls are soooooo much goodness. I've tried them in almost all flavors and my family loves them. I'm making orange cake balls with "black" chocolate for my oldest's halloween party at school and my daughter wants pink cake balls with the white chocolate. I had a hard time finding the almond bark so I used the chocolate that is made for making lollipops and it worked really well too.

You can also do this with oreos!! They are soooo yummmmmy!! Crush up the oreos and add cream cheese to them let them sit and cover them in white or milk chocolate..yummmy!!

Another nurse at work turned our whole unit onto these!! We now have them for EVERY special occasion down here! I love the red velvet ones, but my personal favorite are butter cake with chocolate topping.
BTW- I love all your cute pics of Harper, she is so sweet!!

I forgot to comment yesterday so I'm just going to today...I laughed hysterically at that video yesterday. And not at Harper. I mean the kid is adorably cute, but the fact that you have thousands and thousands of readers listening to that laugh of yours...Priceless. I'm laughing again now.
Wish you would just make me some of those cake balls...I keep thinking I will, but it looks too hard for me. I tried to make that parmesan bread from your blog when we had house guests and it was a disaster...keep meaning to ask you what I did wrong...I'm sure I used the wrong kind of biscuits or something. Luckily, it was Brent and Becca and it all still tasted good and Becca and I stayed up until midnight just eating it out of the pan, but it looked a nightmare mess. Ha.

Kelly, I live in the Seattle area and was visiting my good friend in Dallas last weekend. We were at the Plano hot air balloon festival and saw a sign for a booth selling cake balls and wondered what in the world they were! (She's not a native to Texas) Thank you for showing me! Now I'm sad I didn't buy some!

I am going to have to try these. We did a much harder version at the Viking Cooking school but yours look so easy. I also do something similar that all my daughter's friends like and ask for at Christmas and birthdays. They are called oreo balls. Crush an entire package of oreos in food processor or whatever you have. Mix with a block of cream cheese. Roll into big ball and put in freezer for about 30 minutes. Take out and roll into balls. Put back in freezer for about one hour. Take out in dip in almond bark--vanilla or chocolage--I like the vanilla but some of my friends like the chocolate. They are so good.

LOVE cake balls!!! I LOVE to make them w/ strawberry cake & cream cheese icing dipped in white. I also love chocolate dipped in blue (found at Hobby Lobby). I used both of these for baby showers.

Never heard of them but they look so easy to make. That's my favorite type of recipe quick and easy. I wonder how they would do with melted white chocolate instead of the almond bark.

I made this last year for my daughter's birthday. I don't like red velvet (I can taste the bitter red food coloring) so I tried it with strawberry cake and strawberry icing. It was so incredibly delicious! I am going to make it a holiday treat! I get so many recipes off your recipe site.

Wow! These sound SO SO SO good! I am from Canada and have NEVER seen Red Velvet cake mix in any grocery store (didn't know it existed!). I have only had red velvet once when I made it from scratch (the recipe you posted from Paula Deen) last Valentines Day. I MUST find the cake mix somewhere! Also- never heard of almond bark. What on earth are we missing here in the North!?!? I wonder what I could use instead of almond bark...?? If you get a minute- can you explain more of what it is..... is it like melting chocolate?

Those look yummy, and I'd probably eat my weight in them! Might have to give them a try.
If you ever want to start a business, you could make a killing off sending "Southern" ingredients to our neighbors to the North!! And to our Northern Countrymen(women). Just think about it. You get TONS of comments about never hearing of things like Almond Bark and Rotel. So, when you do start such a business, remember who put the idea in your head! ;)

your cake balls made me famous in our church small group! :) every time we get together i am always expected to make them! I just keep some frozen balls in the freezer and then just put chocolate on them when needed! thanks for sharing this recipe!

That is a great idea to use the scoop and egg separator. I got so frustrated trying to make mine without a huge mess. It is also yummy with crushed oreos mixed with cream cheese and covered in chocolate.

They look really yummy but I won't be able to make them. Not one of those ingredients is available here in Oz. Is almond bark like white chocolate? I've never even seen cream cheese icing in a can. I thought everyone made it from scratch. I really 'must' be behind the times (or living in the wrong country).
