Okra and Carrots

I was going to wait and post this tomorrow but I've had to lay down on the couch for a while and think about the fact that at least 3-4 of you left me comments and said you didn't know what okra was???? Oh bless your sweet hearts. Okra is only one of the best vegetables EVER! There are so may things you can do with Okra - pickled okra is a personal favorite. We put that on salads. FRIED OKRA will rock your world. Gumbo wouldn't be the same without okra (tell me you know what gumbo is???).
A while back a ton of people left comments on my recipe blog wanting to know what Rotel is and now Okra. Help me Help you people!! I want to introduce you to the blessings that is southern food!
I got a great deal on steaks at Sam's today so we had a yummy meal. One of my favorite sides is to cut up red potatos and bake them. I love to put a little olive oil on them and mix with onion soup mix or tonight I added garlic salt and parmesan cheese. Oh my it is so good.
I saw this recipe in Southern Living (I am ashamed to admit I let my subscription run out so I was reading it at my mom's) and thought it sounded quick, easy and good. Only I didn't write it down and I forgot really what was in it but I improvised and it was SO good. It gave you the taste of fried okra without all the work.
Just saute sliced okra in olive oil and add some (I'm not one for measurements) Italian bread crumbs and parmesan cheese. I also added Salt and Creole seasoning. SO, SO, SO good!! We will be having this A LOT in the future. It took literally all of 10 minutes to make.

Harper got to try carrots tonight. This is the one food I read is better just to buy than to make so I bought several jars. My mom told me I loved carrots so much I turned orange and she has always told me carrots are good for eye sight. Well - this is an old wives tale because I ate a TON of carrots and I can't see past my nose.

And ladies and gentlemen...............we have a SUCCESS!!! The first food she has eaten and not gagged on the first bite. She ate almost a whole jar on the first try! Like mother, like daughter!

Ya'll have me wondering..............what foods are out there that maybe I don't know about??? Are there things in other parts of the country that are regional that I haven't eaten??? I'm curious now!!

I LOVE Fried Okra!! Especially from Cracker Barrell!! We may be trying that recipe very soon!

I don't know what Hummus is! I kind of think it might be a more northern food because I first heard of it on an episode of Friends. I might be wrong, but I've been curious about that one.

I never will forget when Kate @ Channel 7 said she had never had pecan pie and didnt know what karo syrup was! I thought that was a staple in everyone kitchen!

One food that my family loves loves that many people don't know about is Scrapple. I am from Maryland and it seems like the only place that you can find it. It is a breakfast meat. Every time we go home we buy about 5 pounds of it to bring back with us. I believe that there are things all over this country that some people have never heard of.

People don't know about okra. That is one of the only vegetables I will eat. Though being an Air Force brat when we lived in North Dakota they didn't sell grits. My grandmother had to ship boxes of instant cheese grits to us. :)
What issue is that okra recipe in. I have the current one but have not gotten a chance to read it yet. I found one that is oven fried okra somewhere and it is yummy!
Glad Harper loves carrots.

red potatoes are one of our favorites too! i cut them up and put ranch dressing (kraft b/c it is thicker) all over them. cover w/ foil and bake. then sprinkle w/ shredded cheese and bacon bits and bake a little longer. YuMM!! we also do them this way on the grill and they are to die for!

okay, i'm hungry now :)

Well now that's just sad that some people have never had (even heard of??) okra. Totally sad, sad, sad. It is far and away one of my favorite foods EVER! Have you ever had fried okra salad, Kelly? So good! I'll have to post the recipe. Do you want to hear something funny? (Tragic?) Okay, when Amelia was a baby, I fed her carrots, yes because they are a healthy food, but...I thought they gave her some color kinda like a tan and I thought it was so cute! Not to the point of orange, just a little color. I always made sure to feed her carrots or sweet potatoes a little extra before we were going to do our pictures. Is there something so wrong about that?? Haha!

I can say that I knew what Orka was .. But I can't say I have tried it! The only reason why I know what it is, is because of Mrs. Paula Dean!! Ha.

Growing up in the Northwest, I can't recall there being any type of food that we do but maybe other parts of the country don't .. But I will say we are all about coffee in Seattle!! And when traveling elsewhere I have realized people in Seattle drink SO much!!

I worked at a Young Life camp and all the people from NC, Alabama, TN .. Raved about Sweet Tea (which I have yet to try), and restaurants such as Chick-fli-a, Bojangles, and Wafflehouse ... Definitally don't have these stores in Seattle. But here in Arizona I can say I have visited Chick-fil-a ..

For my twins (second pregnancy) I decided to make my own baby food since I knew I couldn't afford to feed two HUNGRY girls! I loved it, and so wish I would've done this for my first born.
My suggestion?? Pure pumpkin, straight from the can, warmed a bit...the girls LOVED this!!!! You can put it in ice cube trays, freeze it, and then pop them into freezer bags.

Woohoo for carrots!!
There's a brand of chips made in NW Ohio that are THE BOMB! They are called Ballreichs and they are the staple for every summer get together. It's a no brainer. You have a cookout or gathering, you get Ballreichs. I live in SW Ohio, which doesn't have them so when I go home to visit I get some. My cousin who lived in Lousiana for a period of time would get them and her neighbors would want to buy them off her for $20 a bag. No kidding!

I didn't read thru all the other comments, but wanted to suggest avocado for Harper. It had never occurred to me to give avocado to a baby until we moved to TX. Some friends there gave it to their kids (cut up in little chunks) and they loved it. My children were already old enough to have their own opinions so they don't like it yet. But, we keep trying!

DYK what pepperoni rolls are? They were created in the WV coal mines. It's a sweet roll with pepperoni in the middle. Sometimes you put cheese in it, but that isn't a "true" pepperoni roll. We have them in gas stations and everywhere here.

I'm going to try out your okra recipe the weekend, I think! Yummy! And my life would not be the same without Tony's! Its always funny when you find out people have never heard of a food that you are so familiar with! I remember when I was little going to Philadelphia with my family and have a bagel for the first time. They weren't very known down here in the south yet, but huge up there. I was in love and wanted to move there just for the bagel. hahaha!

I can't believe there are those out there who have lived their whole lives and don't know what okra is!!! Way to go Kelly for introducing them to okra!! We love some okra in our household! Oh, and one of the comments from your recipe blog said people in Florida don't know what Rotel is and I am here to say that I live in Florida and we definitely know what Rotel is down here! :) Maybe those in South Florida don't but up here in North Florida we sure do!! One of the best game day dips we make includes Rotel. Can't wait to try the new recipe!!

Although I know everyone knows what avocado is, I had NO IDEA how big it was in Southern California until meeting my husband. He literally puts avocado on everything and so did all of his family & friends. Now I cant eat a cheeseburger without some avocado on it!

I'm from South Georgia, so I'm very familiar with okra and Rotel. However, I worked with a sweet lady from Maine. She would bring in things like creamed cod for lunch. eeewww Then one day, she mentioned having a tomato sandwich for her lunch. I was expecting to see a traditional southern tomato sandwich...bread, mayo, salt, pepper. Nope, hers was the thinest slices of tomatoes I've ever seen...almost paper thin, mustard and pickles. Just one example of how different regions interpret things!

I have no idea what Rotel is and I've never had okra (but I know what it is) or gumbo (I know what that is too). I grew up in western NY (but my grandma is southern) and had never heard of greens until I moved to Cincinnati, OH (it's almost Kentucky, y'all).

A staple around here is Cincinnati chili. I know you know what chili is, but here it's different (and gross in my opinion). It's more like a meat sauce and all I know is there's cocoa powder and cinnamon in it! Another Cincy thing is goetta. It's German actually. Another thing is, around here, some people use corn syrup on their waffles/pancakes! And I was looking for Karo syrup in the baking aisle. Silly me! I guess I'm a Yankee for life.

I live in the Midwest. I have had okra severeal times and don't particularly like it however I am going to try your recipe and see what I think.
Rotel is all around here you just have to look for it. I have several yummy recipes with Rotel.

While I was born and raised in the northeast, I do know what okra and gumbo are (although I am not a huge okra fan) and definitely ate my fair share of gumbo when I lived in Louisiana. I have heard of Rotel, but what is this Rotel dip that ya'll speak of? I am thinking it is something I need to add to my recipes.

As for regional foods, the only one I know of where I am from that no one else really knows about is coffee milk. When I mention it people assume I mean cafe au lait or coffee with a lot of milk. It's actually regular old milk with cofee syrup (like chocolate syrup) added to it. The syrup is only made in Rhode Island and when kids at elementary school buy milk cartons their choices are plain, chocolate, or coffee.

I can't believe some people do not know what OKRA is...I grew up eating OKRA and I just love it love it love it...especially in gumbo.....wonder if they know what gumbo is??

This is my first post to you Kelly, and I wanted you to know that I enjoy reading your blog and watching Harper grow...I am going to be a grandmother for the first time in March...So excited.

I'm with you, I had no idea people didnt know what okra was! You cant live in OK and not eat okra with fried potoatoes! At least 2 things on your dinner plate must be fried! LOL My oldest daughter Kennedy at so many carrots and sweet potatoes as a baby she too turned orange like a flamingo! I didnt realize it though since i saw her every day, the pediatrician pointed it out. She just didn't like the greens! :)

I still can't get over Martha Stewart not knowing what cream of chicken soup is let alone someone not knowing what okra is!! I love fried okra and fried squash..the joy of being southern! I wondered why you have heard to buy jars of carrot baby food and not make it yourself? I made Avery pureed carrots a lot and I never heard anything about not doing that. I must have missed that suggestion!

I'm originally from the suburbs of Chicago and I knew what okra was, but only because my dad got it fried when we went to Cracker Barrel as a treat (usually on our way hoime from vacation). I didn't at all know what rotel was until I moved to Tennessee. Someone kept telling me to buy rotel and I had NO CLUE what they were talking about!!

I can't wait to try a more simple way to cook okra. I LOVE fried okra and yummy yummy fried squash, but it is so much work and SUCH a mess!

ooooo, we love okra here! My boys (5 and 2) will eat it like there is no tomorrow! lol. Those of you who have never had it should go to a Cracker Barrel....they have it as a side option.

I moved to Irmo, South Carolina in high school. It is the home of the Okra Strut, an annual festival celebrating all that is wonderful about okra. Before that I had never heard of it. Now I love it.
I have a food you probably haven't heard of, fiddle heads. They are a green, a baby fern before it opens up and uncurls. You pick them in moist areas in the spring. I am from Northern Maine, but I don't know if they eat them anywhere else. My family steams them and then puts vinegar on them. I know, weird.
I love reading your blog, you have a beautiful family.

I'm from Georgia, and I say "okree" for okra. That was how my granny from west Florida (lower Alabama) said it. We love it, and I make a ham and okra roll as an appetizer that is easy and a big hit. All you do is take the wider slices of sandwich ham, spread them with whipped cream cheese, then put a pickled okra in it and roll it up like a jelly roll. You slice them, and just pop them in your mouth and they are delish! (and low carb if that's your thing!)

I think the only reason I know what Okra is is because I lived in Texas for about 3 years. I don't know if they even sell it in Utah! I can't think of any specific foods here that you may not know of but one thing I know of that is not really available in other parts that we LOVE in Utah is Fry Sauce. Maybe you have had it. It is basically just ketchup and mayo mixed if you make it yourself but buying it at the store or getting it at restaurants is much better!

I know what gumbo is - my hubbie loves it and I have actually made it once - but I do not like spicy and he loves spicy - BUT I have never eaten okra either - I know what it is - but I don't recall ever even seeing it available at the grocer here (midwest)

I LOVE okra. I have the best recipe for an okra salad that my sister-in-law gave me. It is absolutely amazing. I like it cold, hot, warm, etc. etc. etc. It's great.

1 1/2 lbs. breaded frozen okra
veg. oil for frying
2 lg. tomatoes, seeded and chopped
1/2 green bell pepper, diced
1 bunch green onions, diced
6 slices bacon, cooked and crumbled
Dressing:
1/2 C. veg. oil
1/4 C. sugar
1/4 C. distilled white vinegar
Fry okra in veg. oil according to package directions; drain on paper towels. In a med. bowl, combine okra, tom., bell pepper, green onions, and bacon. In a small saucepan, combine oil, sugar, and vinegar. Cook over medium heat, stirring frequently, until sugar dissolves. pour over okra mixture, tossing gently to coat. Serve immediately.

Sorry this is so long. Figured if you were going to try it it would be easier to get recipe off your blog. That way you don't have to go to mine. Hope you like it.

OK, I haven't commented in a little while, but... I have to share some of my Cincinnati favorites with you! First, there is Skyline Chili! Skyline chili, I am told, is an acquired taste, but it is soooo good over spaghetti with cheese on top. We also use to to make Cheese Coney's, which are Hot Dog's with Chilli on top and then smothered in cheese! YUMM!!!! The other thing that Cincy is famous for is Montgomery Inn BBQ sauce. I honestly am not a big fan, but many people love it up here.
I also have to say... I do know what Okra is, and LOVE Rotel! I may be from Ohio... but my heart is in Kentucky and Tennessee!! :)

Being born in Kentucky and lived in New Orleans for awhile...this West Virginia girl knows exactly what Fried okra (and gumbo) is!! I make Jambalaya all the time at home!!

I'm in West Virginia and my relatives in other states didn't know what these were.....do you know what a pepperoni roll is?

I LOVE Okra.. anyway you cook it! and what would Queso be w/o Rotel!, I'm from Texas, but my Aunt lives in Hawaii, and we visited her for a month one time, but here was a fruit called Lychee.. that was AWESOME! I loved it so much, but I couldn't bring it back.. I didn't know if you had seen that on your trips over there. Its good.

Oh my sweet heavens above, okra is an absolute favorite food of mine. I only eat it on occasion because I'm the ONLY ONE in my house that will eat it! I don't get that at all! I'll eat it any way you give it to me: fried, pickled, stewed with tomatoes, and on and on! My grandma used to cook up a big 'ol pot of peas (usually crowder/cream peas) and add whole okra to it. Yum-O!!!!

As far as baby food, when I was little I LOVED plum baby food. I remember my grandma buying it for me until i was...4 or 5 just cuz I liked it to snack on! Haha :)

Well, my dear Tri Chi sis, I'm sorry to tell you that in the un-Frozen Tundra (Wisconsin), okra is generally unknown. In fact, when dining with potential colleagues at the job that brought me here, the subject came up. The comments were along the lines of "what is okra?!?" and "I think I've seen it at the Asian grocery." I nearly fell out of my chair. Despite that experience and the fact that I can't even buy okra here, we moved from Texas anyway (something about God's will and all :-) ). I would ask my Granny to freeze a bunch for me this summer, but the shipping would be horrendous. I'll just have to settle for the entire serving bowl of fried okra when I visit her.

I freaked out when I first read your initial posting about Okra! I LOVE it! Yes, that's right! A Seattle born & raised girl who fell in love with Okra! =) So amazing! I actually fell in love with it in college when they served fried Okra in the caf! Ah! Seriously! LOVE LOVE LOVE it! Not sure where to buy it around here... but I ought to consider it! =) I feel bad for all those people who have missed out on such a delightful veggie! =) Thanks for posting again!

That is so funny to think that someone would not know what okra is (and Rotel...oh my....it's a staple in my pantry) but also very interesting and intriquing to think of all the things that we must be missing.

For your potatoes...try this (it's a favorite at my house): mix a little olive oil with one envelope of dry ranch dressing mix (enough to coat your potatoes) then toss potatoes to coat before you bake. I've also done this by boiling the potatoes first (when I don't have enough time to bake) and then adding the oil (or margarine) and dry dressing mix. Just be careful not to over boil.

At any rate, my husband (from Ohio) did not know what okra was either. He's still not impressed, but that doesn't keep me from ordering it every time we go to Cracker Barrel. (It's hard to find fresh okra up here in NW OH.)

Also, I'm the exact same as you with the carrots! My mom tells me I turned orange as a baby from eating so many...and I got my first pair of glasses when I was 5.

I am a Texas girl living in NJ - most people here do not know what okra is. We have shared it with a few friends, but it is also tough to find here. Typically late in the summer I can find it at the farmers market and I pretty much buy all of it! Normally I would be more into sharing - but I figure if no one here knows what it is then we might as well be enjoying it! Thanks for the recipe ideas! Hopefully I will find some okra soon :)

Oh okra....I really can't call it a veggie...because it is SO good. Fried okra would definitely be on my last meal menu. And gumbo...hmmm.

I wonder if there is food from other parts of the US that I don't know about?

That is too funny...when I was a baby, they thought I was jaundice because I had turned orange. As an afterthought, when the doctor was leaving the room, he asked my mom about my diet, and she told him that all I would eat were carrots. I was literally turning into a carrot!!! LOL!!!

And yes...who doesn't know what okra is?!?! You haven't lived until you have had homemade fried okra! Seeing your picture makes me want to fry some up tonight! With some squash and mashed potatoes. Maybe some cube steaks and gravy. Yummy! Can't wait for dinner tonight!!!

I am a Northern transplant to the South and I have to tell you...I no nothing about Southern cooking! My poor neighbor almost died the other day when I told her I had never had okra before. She then made me a batch of fried okra...it was pretty good!

I bet you have never had Corn Pie, it's a Pennsylvania Dutch thing. Yum!!

i grew up eating okra. i hated it as a kid, but i enjoy it now. i will admit that i didn't know what rotel was until our neighbors made us rotel and velveeta dip (they moved here two years ago from arkadelphia, ar) when i went to buy it at the store for the first time i wondered around FOREVER not knowing where to find it!

have you ever had tri-tip? i think it's a california thing. it's similar to a steak, but WAY better. it's a different cut of beef. come to cali and order or buy tri-tip. you won't be sorry!

Your SL subscription ran out? What? Just kidding. I don't remember seeing that recipe, but I'll have to try it now. I, too, heart okra (but not pickled). I am so glad my husband's grandmother buys that for all of the women in our family every year, and it is a lot. Do you know that she buys so many subscriptions each year that she actually haggles over the price. One year she got each subscription for like 8 or 10 dollars. Who knew magazine prices were negotiable?

I am a Utah girl and the big thing for us is Fry Sauce! However, I must admit, I had never heard of Okra until I tried it at our local Cracker Barrel. MMMMMMM!

So glad Harper likes carrots! My daughter also gagged on most all foods except for pears, carrots, sweet potatoes, and squash until around 12 months. Yes, her nose did turn a slight orange color that distinctly shows up in our pictures (the stories we can tell later!). Now at 17 months she eats almost everything in sight!

It's funny how different regions have different foods.

Rutabega(sp?)...have you had this, Kelly? It's in the turnip family. My husband introduced me to it, and it's *wonderful*! I peel off the outer layer, chop it up, boil it w/carrots, then mash together. Pretty and yummy. :)

Yummy!! The fried okra you prepared is how it was introduced to me growing up---long before deep fryers. Personally, my favorite way is the "old-fashioned" way, the way you made it. :-)

This is two meals this week you've shown and makes me hungry for some. First the pancackes, now this. =) Enjoy your blog to pieces!!

I love me some OKRA!!! Oh my! It is the best fried and you are right about the gumbo! Oh my, I am sooo going to try this okra recipe this weekend! Thank you Kelly! You are just awesome!

Kelly! As I read some of the comments people posted, I am dying laughing! I grew up in the south and okra was a staple. We always ate grits for breakfast and there wasn't a pantry that I knew that wasn't stocked with Rotel or most "cream of" soups. This is the first time I have posted, but have been reading your blog for so long. I have a sweet baby girl named Finley that was born Jan 14, 2009. Her and Harper were almost the same day. Harper is the cutest thing and I love reading what she is doing now. When I saw the dress Harper had on in your post today, I had to say hi! Fin has the same one. We love Walmart shopping!

I totally forgot to mention white hots! White hotdogs, that is (made with pork). They're a Rochester, NY staple. Though, personally, not my favorite. Whenever I mention them here in Cincinnati, people look at me like I'm nuts.

Also, we love shredded beef rolled tacos with Guacamole and Carne Asada Burritos from little "hole in the wall" Mexican joints. Yum!!

When we lived in St. Louis, I didn't realize how good I had it food wise. I miss pork steaks (they don't exist in TX) and provel cheese like CRAZY! Luckily I can make my favorite STL dessert-GOOEY BUTTER CAKE! People in Texas always think it's lemon bars until they bite into the super sweet deliciousness! Here's the recipe in case you haven't tried it-

1 pkg. yellow cake mix
1/2 c. butter
1 egg

1 (8 oz.) pkg. cream cheese, softened
2 eggs
1 lb. box confectioners' sugar
1 tsp. vanilla

Mix together cake mix (just the mix, not the other ingredients called for on the box) with butter and 1 egg. Pat into an ungreased 9 x 13 inch cake pan. Cream together cream cheese, 2 eggs, powdered sugar and vanilla. Pour over cake mixture. Spreading to the edges. Bake at 350 degrees for 35 minutes.

Was the okra as good as fried that way? Was it crunchy at all? I love to cut okra super thin and fry it til it's crunchy.

OOOOHHHH....Slimy okra is the best thing ever!!! Put some okra in your black eyed peas and boil them!!! YUMMY! I just love okra!

Kelly, you were super close on the okra recipe!
1 lb fresh okra, cut into 1/2" thick slices
2 tbsp EVOO
1/4 C italian breadcrumbs
2 tsp greek seasoning
1/4 C freshly shaved parmesan

Saute okra in oil for 5-6 min-sprinkle with breadcrumbs and seasoning for 3 min-sprinkle with parm and serve immediately.

These were such fun posts, my husband I recently traveled to Costa Rica and it was so funny that they all assume that Americans are exactly the same, not only with foods, but with language too! You should totally do a post about phrases that people use...I bet it would be so fun to hear all the different terminology! Harper is beautiful and I know she's such a blessing! Thanks for all of your encouraging posts!
PS- love okra on the grill to with fresh asparagus also!

I've never had okra. Never heard of Ranch style beans or Purple hull peas(?). My sister went to school in Texas and introduced me to Rotel. We have it in the stores in CA, I'd just never noticed! I'd never had biscuits and gravy until I visited Atlanta in college. Actually, I thought the gravy was grits, since I'd never had grits either! So I ate the gravy plain, without the biscuit!!

Originally from Western New York, we have soo many tasty foods. Obviously Buffalo Chicken wings, beef on weck, pierogies, and SPONGE CANDY!!! And now I live in Rhode Island we have coffee milk, quahogs, and all sorts of random sea-foody things.

I grew up in St. Louis and have sinced moved away but one thing that I can't seem to find anywhere but there.... toasted ravioli!

It is ravioli (either cheese or meat) that has been breaded and deep fried. You serve it with marinara sauce for dipping - SO YUMMY!

I moved from MO to TX - so rotel and okra are long time faves :)

While I was putting together my menu this week I came across this recipe and thought of you.

Rotel Potatoes

5 red potatoes
1 (16 oz) pkg. velveeta cheese
1 can rotel
1/2 stick butter

Boil potatoes whole (do not peel). melt cheese with rotel and butter. grease 13x9 inch pan. slice potatoes and pour cheese mixture on top. bake at 350° for 10 to 20 minutes.

it is really yummy but quite a lot to make to often since I am single.
