Life as a domestic Engineer

I can't believe how many places you are all from. I'm especially blown away by all the people in other countries..........reading a little girl from Arkansas' blog. ha! That was so fun to read about where you live! You really did make me want to come visit you! Don't start listing off the best food where you live or I'll be gassing up the car!

So - I thought I'd share a few things I've done this week besides change diapers and singing nursery rhymes! After all - I'm not just a mom - I'm a Domestic Engineer!

We have this big wall in our dining room and so a few years ago I framed some botanical prints and hung them in a grid. I loved how it turned out - I was inspired by Ballard Designs.

But the prints are near a large window and have faded in color and lost some effect
So I got a new set of prints - they are bigger and brighter and I like them a lot!
Oh and by the way - at Ballard - a framed set of prints like this would be $300-$600.

I got these prints on e-bay for $15 (search for set of botanical prints), the mats came from Hobby Lobby half price (approx $12), frames were at Wal-Mart around $3 each. So I spent around $50-$60. Not bad.

On to meal time........we eat a lot of chicken. I am constantly looking for new ways to fix chicken. One of my favorite things to do is to go to www.allrecipes.com and go to the Ingredients tab and put in what I have on hand and search those recipes. Like last night - I knew I had some artichokes and some Parmesan cheese. I put those items in and I came up with a recipe and it was really good. So I put it on my recipe blog - if you like artichokes (and I really do) - you should try it!

Today instead of a picture of Harper - I thought I would share a little video. (yes I have a southern accent but I'm also talking in my "baby talk" voice so I sound a little crazy! ha!)



Also - MckMama wrote a great post today about a subject I've been struggling with lately - I've had a lot of people ask me about this - about God's sovereignty and our prayers. I couldn't agree with her post more.

Thought I'd share a favorite chicken recipe of mine from Ellie Krieger. It meets all of my criteria for recipes: easy, quick, minimal ingredients that are commonly on hand, and generally healthy:

1 pound boneless skinless chicken breasts (I buy boneless skinless breasts at Sam's. I cut 2 large breasts into halves so I have 4 pieces)
1 lemon
2 t olive oil
Freshly ground black pepper (my pepper grinder is broke so I just used plain old black pepper)
Coarse salt (I just used regular salt)

Heat oil. Pat chicken dry. Sprinkle with salt and pepper. Cook chicken in oil over medium heat until done. Juice lemon over chicken while in pan, heat 1 minute, and serve. (Don't forget to drizzle with pan juice.)

It's tangy and delicious! I served it with brown rice and steamed veggies. It would be good with an angel hair pasta, too.

I too was touched by what MckMama wrote today. Often I get asked hw I can find comfrot in My Lord when he took my daughter Katie from us 3 years ago to Cancer. My answer is that when we realized that a miracle was not going to happen we prayed for comfort. For it to be fast. That we would never have to take her to the hospital again. Well let me tell you God really is a parent because I know when I can't give my kids what they want but the beg for something to help them cope I give it to them and that's what he did for me.

Oh she is so darn cute, I just love the video!!!

I commented yesterday how Bentley also sleeps in her pack and play and I wanted to let you know what helps us. We place a folded towl under one side of the mat so it lifts one side up a little so she is not flat. I started doing this when Bentley got a runny nose because it helped her nose drain so she would get better & not worse.. well, it's just kind of stuck with us. Now I feel it helps her breathe better so we still do it.

Harper is such a cute baby...she just keeps getting cuter and cuter. Here is a super easy crock pot chicken recipe:
4 chix. breasts
1c. chix broth
1c. bbq sauce (I prefer Sweet Baby Ray's)
1T of brown sugar
1 med. sweet onion sliced
Throw it all in the crock pot on high for 4 hours (give or take a little) and you are good to go. You may want to stir it occassion. This chicken is great served as the main dish, but I also like to add it to salads or on wraps. Very yummy!!!

First of all - your wall is fabulous! I love the new prints - your right, it is bolder and brighter. It looks great!

Secondly, Harper is so cute! Thanks for posting a video on her little cooing! That was so fun to see.

Lastly, I have a very simple chicken recipe for you. Cut chicken into small pieces and grill in olive oil and your favorite seasonings. Steam carrots and broccoli and boil some fettucin. Mix all together with your favorite vinagrette salad dressing ( I use Kraft Caesar vinegrette). Top with olives, tomatoes and green onions (or none of those things if you don't like them). It's super yummy hot OR cold. Happy chicken making!

I LOVE your new botanical prints. I was going to give you a money-saving tip. For mats, you can use colored posterboard for a mat. Just cut it to the size you need & center your picture on top. You can't tell the difference between a "real" mat & a posterboard mat. Plus, it saves you a considerable amount of money as you can usually get several "mats" out of one piece of posterboard. Just thought I'd pass it along...

I wish I was a domestic engineer! Hopefully - I will get that promotion one day to that! I forgot to add my post yesterday. Anyway - I'm Amy - I'm from Toledo, Ohio - although, originally - I'm from a VERY small town in Northwest Ohio. I'm a farmers daughter. My original dwellings are about the size of a pin prick on the map and that's close up. My little tiny town of about pop. 160 - give or take who was born or who got called home is Miller City, Ohio. No one has any reason to go there except to go cow tipping or to watch grass grow. It may be totally flat land - but it's so peaceful and serene there - I'd give anything to be back there and tip cows and watch the grass grow! That's what I love the most about it! That and everyone there are the nicest people you'd want to meet. It doesn't matter if they know ya or not - you still either get the farmer wave, the tip of the John Deere hat, or the three finger farmer salute.

I absolutely love your blog - I think mainly because we're the same age. DH & I are thinking of starting our family now too! Of course - it helps that Harper is the cutest thing in Arkansas! ;)

Awwwwl, Hello Little Harper you look too cute:) The pictures turned out great! I love interior decorating. I love to see little things like this that you can do and it doesn't cost a lot of money but wow what a difference. We changed out all the door knobs in the house to an antique bronse crank style and that little difference dressed up a plain door and made it look more thought out, rather then the simple handles.

Well, I can't get the video to load but I had a thought. I have an area in my dining room that has something similar to your grid of prints. I was thinking of swapping those prints out with candid shots of my girls. Just as time goes by, change them and they be the beautiful faces shining to my guests. What do you think? Harper would be easy on the eyes obviously!!! She is a doll and would be gorgeous to look at in all her custom clothes, hats and bows!

Oh you and Harper are just precious! I love your accent! You are a wonderful decorator - I think I will hire you to come and fix up my house which is sorely lacking! Well, I won't tell you about Scottish delicacies like Haggis (though I do actually love it!), but if you like fish and meat pies, we have some wonderful dishes from my native land!

I will have to check you the recipe site you posted - I used to be very interested in cooking, but after having kids and still working full time, I literally don't have the time anymore and facing a stove at 8:30pm at night is not a fun prospect. I have thought a lot about crockpot cooking, but again have not gotten my act together. Thankfully my husband is a great cook!

I am desperate for some good news with Stellan!

Oh my goodness! I am SUCH a grandmother!! I sat here wiggling my mouth and cooing right back to Harper and telling her how precious she is while my eyes misted over - not once, not twice but THREE times (so far!). Kelly, the video is priceless! Do you know what absolute joy there is seeing your wonderful pictures of this beautiful child and praising God for what a miracle she is. I woke up at 3:30 this morning with a prayer burden for Jonah(Williams) and Stellan and couldn't help but praise God once again for healing Harper! I always thought it was so clever and yet showed her confident personality with her choice to stay home.

From one Southern girl to another, it's great to hear that accent! I'm in metro Atlanta, so quite a few people here have either "lost" or never had their accent. Even mine seems to go and come anymore. I love to hear it! And, how sweet to hear Harper too! :)

I struggle w/that also and "why" questions about Colin's heart and all he has been through. I know there is a reason for everything, it's all in God's plan, if He would just let us in on that, it might be a lot easier. :)

What a wonderful accent, I'm a southern girl too and living in Hawaii I get some funny looks when people hear me say yal'l...hehe. I miss the southern twang sometimes, Im married to a yankee so he usually only says "yal'l" to make fun of me.

I'm from Toledo, OH. During the spring & fall it's beautiful here! We have LOTS of fun stuff to do during the summer. The Toledo Zoo is amazing & one of the best kids zoos to visit.
Lots of festivals & county fairs during the summer - although, I'll be in my 3rd trimester by the summer, so I'm not really thinking there's going to be much walking in the heat! :)
For food - we're known for Tony Packo's hot dogs.

Oh and here are two chicken recipes we love in our house. I eat no red meat, so we do a LOT of chicken and ground turkey around here too.

Chicken Taco Soup
3-4 chicken breasts
1 onion, chopped
1 large can tomato sauce
1 can or bottle of beer (could substitute chicken broth if desired)
1 package taco seasoning
2 cans Rotel (or 1 can Rotel and 1 can diced tomatoes), drained
1 can black beans, rinsed and drained
1 can chili beans, drained
1 can whole kernel corn
Add tomato sauce,onion, taco seasoning, Rotel, beans and corn to crock pot. Stir to mix well. Incorporate the beer into the mixture. Add chicken breasts to crock pot and push them down under the liquid mixture. Cook on low for 8 hours. (Or high for 4-6 hours) When cooking is complete, remove chicken from the crock pot and break it up into pieces, then return to the soup.
You can top this with cheese and/or sour cream. Cornbread muffins make a YUMMY side!

Chicken & Broccoli Casserole
3-4 chicken breasts, cooked and cut up
Steamed broccoli pieces (I use the frozen broccoli that you can steam right in the microwave)
Shredded cheese (sharp cheddar or Mexican blend without the spices)
1 can cream of chicken soup
1 can cream of broccoli OR broccoli-cheese soup
1 (8oz) container sour cream
1 tube Ritz crackers, crushed
*For my soups, I use Healthy Request. I also use reduced fat cheese, lite sour cream and reduced fat Ritz.
Preheat oven to 350.
Spray a 9×13x2″ baking pan with nonstick cooking spray.
Cut up the cooked chicken and put it into the baking dish.
Layer the cooked broccoli pieces on top of the chicken.
Sprinkle cheese over the top of the broccoli and chicken. (Use amount desired)
Mix soups and sour cream together, spread this mixture over the top of the casserole.
Sprinkle cracker crumbs over the top.
Bake at 350 for 30 minutes.

I, too, loved Mckmama's post today. I read a book by Phillip Yancey once that talked about this same thing. It is called, "Prayer: Does It Make Any Difference?" It would be a great book for people to read who have questions about this subject.

I LOVED the video, Harper is just precious and makes me want to drive to Arkansas and snuggle her up with smooches!
I didn't get it on the last post, but I am from Christiansburg, Virginia. It's in southwest VA, only about an hour from the North Carolina border. I am a southerner thru and thru and your accent sounded completely normal to me! I love our little neck of the woods because you can live in the country but be 5 minutes away from the mall, target and sonic! lol. We have all the seasons here too, which I enjoy.

The prints look great! I had a similar thing in my last house only I framed all different pictures of trees...It looked great but there was nowhere in my new house to put them up . That video is priceless!That is why I have 3 boys... on the quest for a sweet little bundle of pink that has thus far eluded me! Shes adorable.

Oh my gosh Kelly, Harper was even cuter on video! You could just see her excitement as she was kicking her little legs!!! I did a little video with my girls in it the other day on my blog to announce my hat giveaway winner. We had so much fun doing it even if our video was a bit low budget, LOL! I'm from a dairy farm in Ontario Canada. My favorite thing about where I live is that we get to experience the seasons. Spring, Summer, Fall and yes even Winter too. Some times I'd rather not see too much winter but when spring comes with all the glorious newness and freshness ( except when us farmers start spreading manure**grin***) I appreciate it so much more :)

Your pictures are beautiful! What a great idea. Okay, I am heading over to your recipe blog. I tried a new chicken recipe last night.

You take 6 boneless chicken breasts and wrap a piece of bacon around each piece. Secure the bacon with a toothpick. In a bowl mix 8 ounces (I used a little bit more) of sour cream , garlic salt(I used garlic powder) and salt and pepper to taste and a can of cream of chicken soup. Pour over chicken and cook on low for 7 to 8 hours. This was so good and it made our house smell so good. :) This is great served over rice.

I think this is my first post, but I couldn't read today and not say something. Harper is gorgeous, those big expressive eyes are going to get lots of attention. We have been praying for her and will continue to do so.

If someone had told me 20 years ago at my HS Graduation that I would be a "Domestic Engineer" I would have laughed out loud. Now I wouldn't trade it for anything and I thank God everyday he has given me this gift.

I love your love of college sports, I am the same way. To the point I drive my husband a little nuts at times. LOL

You don't have an accent to me, but that's because I live in Alabama! Mine gets more southern every day. LOL

I'm Kathy and I have a giant, man-sized 12 year old son and 10 year old boy/girl twins. I worked up until my oldest was born and then just couldn't bring myself to go back. We now homeschool.

We live in Birmingham. It's awesome here! I didn't grow up in the south but I obviously should have. I love the hot weather.

Can she be any cuter??? And you can have a cuter southern accent? Gosh I just adore "southern" things and here I up way up north. I didn't post yesterday about where I live, but I'm in Washington State - technically about 1 hour north of Portland, OR. Gorgeous here even tho it rains quite a lot, hence the reason they call it the "Evergreen State". I love the wall - I think that is a smart and fabulous idea. We have some Thomas Kinkade pictures in our bedroom and I've always joked they are "numbered prints" because they are pages from an old calendar I framed in Walmart frames many years ago.

Awwwwww!! Thanks so much for the video of sweet Harper! I've been praying for you all since Harper was born, thanks to Boomama. My 8-year-old-daughter loved to see Harper, too. I struggled with infertility for five years, and then have lost 7 precious babies. It is good for my daughter to see how great Harper is doing after being sick.

You've got a sister in Christ so happy for you in Round Rock, Texas - north of Austin. And I'm THRILLED that you're staying home with Harper. It is truly a priviledge. Even though some days, especially the first couple of years, were hard, it is SUCH a BLESSING! I wouldn't trade one of these days with my daughter.

I have looked at their botanical prints for years and am so inspired by your wall. I've wanted one like it for years- litterally years. As soon as we move, I am totally copy catting you! But the big question is this- HOW IN THE WORLD DID YOU GET THEM STRAIGHT???? I tried to hang three little square mirrors in my babies nursery and they were impossible to get evenly spaced. Do you have a trick?

And... who knew about the ability to type in ingredients that you have on hand and voila it produces recipes????? I will bookmark the website and be using it daily. Thank you, thank you, thank you! From the bottom of my hubbies belly, thank you:)
