Eggs

I need to do a small disclaimer on my last post in case ya'll think I am better than I really am. Yes - I have lost almost 7 pounds this week. HOWEVER - I gained around 5 LBS the week of Christmas from over eating so really I'm just back to where I started. And going from eating 3 or 4 pieces of cake or pie a day plus candy plus pizza, mexican food, casseroles and instead - eating only chicken and vegetables - it's easy to lose some of that bulk. I will probably gain it all back this week or maybe lose 1/2 a pound.
BUT - Scott DID lose 11 pounds this week. I am so proud of him. That's like an episode of Biggest Loser. We even didn't go out to eat after church today which is really hard. That's always our favorite thing to do.
So tonight after church I got the idea that we should have omelettes for dinner - which is weird because eggs make me gag. But it sounded good at the time.
The only problem was (because eggs make me gag) - I have never made an omelette. So Scott actually helped me cook! I cooked the spinach and mushrooms..........

and added tomatos and bacon
And Scott cooked the eggs and then we put the mixture plus cheese inside -
And here we go! I ate most of it but I didn't really like it. Scott loved his.

I'm not a fan of mushrooms, but even the mushrooms look good in this. I can't make an omelet to save my life! Still praying!

I have been married for 17 years and I've NEVER made an omelette. I wouldn't even have a clue as to where to begin. Yours look yummy though! You've inspired me to figure out how to make them.

I've never made an omelette either. I don't like eggs, so I've avoided it so far. These do look gourmet though--impressive! :)

I just read Jamie's comment & I wonder if there was something wrong with all the eggs in Flippen! Those omelettes look so yummy!

Eggs and Mushrooms make me gag so there you go...I would not have eaten it all either! :o) Congrats on the weight loss. My sister decided to move her wedding from this Fall to this March...so I am trying to do a little better too!

That looks so gourmet! We have been eating a lot of eggs lately too, due to the low carb/high protein diet. I still think that is an amazing achievement for one week, so kudos!

PS-I was in a couple of minor pageants when I was younger, but by no means was I a professional like the girls I judged.
